Easy roasted beans in a rustic way

This easy recipe is perfect for those who want to eat in a very relaxed way. The beans are roasted slowly in the oven and they are delicious and full of aroma. The simplicity of this recipe makes it easy to reproduce at home, even with little experience in the kitchen. Here is what you will need.


Ingredients

500 g beans or 2 cans of beans

2 pcs. of onions

2 pcs. of carrots

2 pcs. of peppers - green and red

1 piece of celery (root)

1/2 tsp. oil

60 g butter

1 pcs. dried spicy pepper

3 twigs of mint

1 tbsp. tomato puree

1 tsp. tomato juice

1 tbsp. red pepper

1 tbsp. flour

hot water


Instructions

Soak the beans in the evening. The next day, pour out the water and wash it very well. Put the beans in a saucepan of cold water and cook over low heat until ready, strain. If you are using canned beans skip this step.


In a non-stick pan, heat the oil and add the diced vegetables (onions, peppers, carrots, and celery), add the butter as well.


Fry until slightly softened and add the whole hot pepper, add salt. To them add tomato paste and juice and sprigs of mint, and stir.


Pour the boiled or canned beans into the vegetable pan. Add the pre-mixed and well-dissolved flour and red pepper with a little cold water, stir and also add to the pan.


At the end add warm water to cover the products, stir and salt to taste.


Place in a preheated oven at 200 degrees for about 40 minutes until there is toasted crust. Incredibly tasty and mouth-melting roasted beans.
