There’s nothing quite like the smell of freshly fried Tiganichki in the morning. These soft, fluffy pancakes with crispy edges have been a beloved breakfast in my family for generations. Passed down from my great-grandmother, this recipe is simple yet irresistibly delicious—perfect for cozy mornings with loved ones.
Whether served with homemade jam, fresh fruit, or a dusting of powdered sugar, Tiganichki bring a touch of nostalgia and warmth to the breakfast table.

1.5 cups flour
1 packet vanilla
Pinch of salt
Oil, for frying
---
How to Make Tiganichki
1️⃣ Prepare the batter: In a mixing bowl, beat the eggs. Stir in the yoghurt mixed with baking soda and mix well.
2️⃣ Incorporate the dry ingredients: Gradually add the flour, stirring until smooth and lump-free. Mix in the vanilla and a pinch of salt.

3️⃣ Heat the oil: Pour oil into a pan and heat over medium-high heat.

4️⃣ Fry the Tiganichki: Using a spoon, scoop batter and drop it into the hot oil. Fry until golden brown on both sides. Depending on your pan’s size, you can cook 5-6 at a time.

5️⃣ Serve & enjoy: Let them drain on a paper towel, then serve warm with jam, fresh fruit, or powdered sugar.
