Pasta e Lenticchie (Italian Lentil and Pasta Stew)
Ingredients
250 g ditalini pasta
280–300 g dried lentils, rinsed
350 g cherry tomatoes, quartered
3 cloves garlic
Fresh parsley
Olive oil
Sea salt
Black pepper
Method
In a large pot, heat olive oil and gently sauté the garlic and cherry tomatoes until fragrant and softened.
Remove the garlic cloves.
Add the rinsed lentils and enough water to cover them by about 2.5 cm. Season with salt and black pepper.
Cover and simmer for about 30 minutes, until the lentils are tender.
Check the liquid level, adding more water if needed, then stir in the pasta.
Cook for another 10 minutes, until the pasta is al dente and the stew becomes creamy.
Finish with fresh parsley and a drizzle of olive oil.
