How to Make It
️⃣ Sear the Chicken: Season the chicken thighs with salt and black pepper. Heat olive oil in a deep pan over high heat and fry the chicken until golden brown on both sides. Remove from the pan and set aside.
️⃣ Sauté the Veggies: In the same pan, melt butter and add the onion, carrots, and celery. Cook on medium heat until soft and fragrant.
️⃣ Build the Sauce: Lower the heat and stir in the flour, then gradually add chicken stock, stirring constantly to avoid lumps. Increase the heat and bring to a steady simmer, allowing the sauce to thicken.
️⃣ Combine Everything: Return the chicken, potatoes, and mushrooms to the pan. If needed, add a little water to ensure the potatoes and chicken are fully submerged.
️⃣ Cook to Perfection: Bring everything to a boil, then cover and let simmer on low heat until the potatoes are tender and the chicken is cooked through (about 20-25 minutes).
️⃣ Serve & Enjoy: Sprinkle with fresh chives, serve warm, and enjoy this comforting dish!
