There’s something incredibly comforting about a warm bowl of Potato Leek Soup. It’s simple, creamy, and full of rich, savory flavors—perfect for chilly evenings or when you need a bit of homemade comfort. This classic soup comes together with just a few ingredients, blending the mild sweetness of leeks with the creamy texture of potatoes.
It’s a one-pot recipe, making it easy to prepare, and it can even be made ahead and frozen for later. Whether served as a starter or a light meal with crusty bread, this soup is a true kitchen staple.

Ingredients
3 tablespoons unsalted butter
4 large leeks, white and light green parts only, roughly chopped (about 5 cups)
3 cloves garlic, peeled and smashed
2 pounds Yukon Gold potatoes, peeled and chopped into ½-inch pieces
7 cups chicken or vegetable broth
2 bay leaves
3 sprigs fresh thyme
1 teaspoon salt
¼ teaspoon ground black pepper
1 cup heavy cream
Chives, finely chopped, for serving
---
How to Prepare
1️⃣ Sauté the leeks & garlic: Melt the butter in a large soup pot over medium heat. Add the chopped leeks and garlic, cooking for about 10 minutes until soft and wilted. Stir regularly and avoid browning.

2️⃣ Simmer the potatoes: Add the potatoes, broth, bay leaves, thyme, salt, and pepper. Bring to a boil, then cover and reduce the heat to low. Let it simmer for 15 minutes, or until the potatoes are very soft.
3️⃣ Blend the soup: Remove the bay leaves and thyme sprigs. Use an immersion blender to purée the soup until smooth. (If using a regular blender, blend in batches, leaving space for steam to escape.)

4️⃣ Add the cream: Stir in the heavy cream and bring the soup back to a gentle simmer. Adjust the seasoning with more salt and pepper if needed.
5️⃣ Serve & enjoy: If the soup is too thick, add a little water or broth to thin it out. If it’s too thin, let it simmer longer to thicken. Garnish with fresh chives and serve warm!
