Ingredients


3 tablespoons unsalted butter


4 large leeks, white and light green parts only, roughly chopped (about 5 cups)

7 cups chicken or vegetable broth


2 bay leaves


3 sprigs fresh thyme


1 teaspoon salt


¼ teaspoon ground black pepper


1 cup heavy cream

How to Prepare


1️⃣ Sauté the leeks & garlic: Melt the butter in a large soup pot over medium heat. Add the chopped leeks and garlic, cooking for about 10 minutes until soft and wilted. Stir regularly and avoid browning.

2️⃣ Simmer the potatoes: Add the potatoes, broth, bay leaves, thyme, salt, and pepper. Bring to a boil, then cover and reduce the heat to low. Let it simmer for 15 minutes, or until the potatoes are very soft.


3️⃣ Blend the soup: Remove the bay leaves and thyme sprigs. Use an immersion blender to purée the soup until smooth. (If using a regular blender, blend in batches, leaving space for steam to escape.)
