Mish-mash (Миш-маш) is a Bulgarian spring dish made with fresh vegetables (typically tomatoes, peppers, and onions), eggs, and feta cheese often garnished with freshly cut parsley. You can also make it with garlic, scallions, eggplants, or carrots added to the dish.
This recipe is perfect for the spring and summer, fresh and easy to make, and I promise everybody will love it!

Ingredients
400 g roasted peppers or from a jar
250 g of cheese
6 eggs
2-3 Tsp tomato juice
parsley
butter
Instructions
Cut the roasted peppers into pieces. Put the oil in a deep frying pan to heat and fry the peppers. Add the tomato juice. Simmer until there is no liquid left.

Beat the eggs and add them with the cheese to the fried peppers.

Fry for about 10 more minutes. Finally, chop add the parsley, and serve. Enjoy!
